Pina Colada Porridge with Creamed Coconut

Ingredients

  • FOR THE COCONUT MILK:
  • 40g Lucy Bee Creamed Coconut
  • 170 ml water
  • FOR THE PORRIDGE:
  • 30g gluten free oats
  • 1 tbsp. Lucy Bee Coconut Flour
  • 1 tsp. desiccated coconut plus extra to serve, optional
  • A few pineapple chunks
  • ½ lime, juiced

 

Method

  1. FOR THE COCONUT DRINK:
  2. Add Lucy Bee Creamed Coconut and water to a blender and blend until completely combined to coconut milk.
  3. FOR THE PORRIDGE:
  4. Add the oats, Lucy Bee Creamed Coconut milk, Lucy Bee Coconut Flour and desiccated coconut to a pan on a medium/low heat and cook gently until the oat are cooked.
  5. Top with pineapple chunks and lime juice, to serve, adding an extra sprinkling of desiccated coconut, if you fancy it.
