Vegetable and Halloumi Kebabs with a Citrus Dressing

Serves: Makes 7 kebabs

Ingredients
- FOR THE KEBAB:
- 100g baby tomatoes
- 1 yellow pepper, diced
- 100g halloumi, diced
- ½ red onion, diced
- ½ green pepper, diced
- FOR THE CITRUS DRESSING:
- 1 tbsp. Coconut Sugar
- 1 tsp. water
- 2 tbsp. fresh chopped parsley
- Juice and zest of 2 limes
- 2 tsp. apple cider vinegar
- 2 garlic cloves, finely grated
- 4 tsp. olive oil
- A pinch of Whole Black Peppercorns, ground
Method
- FOR THE CITRUS DRESSING:
- In a mixing jug or bowl, mix Coconut Sugar and water together and stir until dissolved, to make coconut nectar.
- Add all other ingredients to the jug or bowl and stir together. This dressing will be fairly thick but if you prefer it runnier, either add more olive oil or lime juice or blitz in a blender. Set aside.
- FOR THE KEBAB:
- To assemble the kebabs on skewers, alternate tomato, yellow pepper, halloumi, onion, and green pepper and repeat until all ingredients are used.
- Cook either on the BBQ or on a griddle pan, until the vegetables soften, turning during cooking, to prevent burning.
- Serve on the skewers with the citrus dressing drizzled over the top.
