Pina Colada Ice Lollies

Preparation Time: 5 minutes

Cooking Time: None. Freeze for 6 hours to overnight

Serves: 6x 100ml ice lolly moulds

Allergy Information: Gluten Free, Wheat Free, Lactose Free, Dairy Free, Vegan, Vegetarian

Ingredients

  • 200g frozen pineapple
  • 100ml Lucy Bee Coconut Milk
  • 50ml white rum (If you want to make it alcohol free you could substitute rum for 1/2 lime juiced)
  • Please note that these do contain rum and do count towards your alcohol intake. ALWAYS BE DRINK AWARE.
  • For adults only

Method

  1. To a blender add the frozen pineapple, Lucy Bee Coconut Milk, and rum and blend until combined.
  2. Pour into your ice lolly moulds and place in the freezer.
  3. Leave in the freezer for 6 hours, or preferably overnight.
